Easy Nduja & spring greens pasta Recipe

This quick dish combines pasta, nduja, spring greens, and breadcrumbs. It's perfect for a simple midweek meal.

– 200g long pasta (we used tagliatelle) – 3 tbsp olive oil – 2 small banana shallots, finely chopped – 3 garlic cloves, finely chopped – 20g nduja – 2 tbsp tomato purée – 200g spring greens, finely shredded – ½ lemon, juiced – 25g breadcrumb – 10g parsley, finely chopped – 15g parmesan, finely grated

Reserve a cup of pasta water and cook the pasta according to the package. Drain well. Fry 2 tablespoons of oil in a pan over medium heat.

Add shallots and salt. Fry gently for 10-12 minutes until softened but uncolored, then add garlic, nduja, and tomato purée.

Step 2

Continue cooking for 2-3 minutes to caramelize tomato purée. Stir in the spring greens, water, and lemon juice and simmer for 4-5 minutes until wilted.

Step 3

In another skillet, heat the remaining oil and add breadcrumbs. Stir to coat, then toast for 3 minutes over medium heat until golden.

Step 4

After cooling, add parsley, parmesan, and spice. Stir cooked pasta into the pan of greens with a splash of water and add more pasta water if needed.

Step 5

Add more lemon juice if you think it needs it to make it taste better. Sprinkle the bread crumbs on top to serve.
