Easter Paska Bread is a classic recipe from Eastern Europe that goes well with any Easter meal. It's simple to make and tastes great.

Ingredients
Pour hot water over raisins in a medium bowl two hours ahead. Set aside. Drain and dry on paper towels after two hours.Mix yeast and sugar in a large bowl.
Stir warm milk and water to melt sugar.Add flour slowly, stirring to combine.Cover with a clean towel and let sit in a warm place for 2-3 hours until the dough doubles in size.
Beat sugar and salt into egg yolks until creamy.Whip egg whites into soft, firm clouds.Gently whisk the egg yolk mixture into the dough bowl. Better to use your hands to avoid over-beating the dough.
Next, add the very softened butter, salt, and vanilla to the dough and gently whisk with your hands or a mixer with the hook attachment.
Add egg whites and whisk carefully until mixed. Add flour and mix. Knead the dough in the bowl, form a ball, cover with a clean kitchen towel, and warm it. Let it rest 2-3 hours.
Food processor-ground almonds resemble almond flour.Mix ground almonds, orange zest, dried fruits, and raisins into the dough. Mix well.
Cut and line Paska Baking Forms with parchment paper after greasing them with butter or baking spray.Half-fill them with dough. Rest them for 30–40 minutes in a clean kitchen towel.
Adjust oven rack centre or lower.Preheat oven to 350°F.Brush Paskas with remaining egg yolk.
Bake for 30–45 minutes until a toothpick inserted into the centre comes out clean. Let cool on a wire rack after baking.Combine all ingredients in a large bowl. Whisk fast to generate firm clouds.
Spread glaze evenly on paskas.Let the glaze set before adding rainbow sprinkles if desired.Serve and relish.
