After the pockets have been created, the stuffing should be scooped into them, and then toothpicks should be used to close the entrance.

To ensure that the lamb is cooked through and has a golden brown colour, roast it for around one and a half hours, basting it after thirty minutes and then every fifteen minutes after that.
