Perfect for Easter, Bunny Butt Cake is easy to create and assemble without special pans or equipment. Layers of soft vanilla cake, cream cheese icing, and coconut flakes. It makes the great Christmas dessert with berries!
– 2 1/2cupsall-purpose flour – 1/2teaspoonbaking soda – 1/2teaspoonsalt – 1/4teaspoonbaking powder – 1cupwhite granulated sugar – 1/2cupcoconut oilsoftened – 2large egg – 1lemonzested and juiced – 3/4cupbuttermilk – 8ouncesfull-fat cream cheesesoftened – 1/3cuppowdered sugar – 1teaspoonvanilla extract – 1cupshredded coconutunsweetened – 1large strawberrysliced – 6blueberrie
Ingredients
Preheat oven to 350°F.Paper-line 3 muffin cups and spray a 9-inch cake pan. Set aside.Mix all-purpose flour, baking soda, salt, and baking powder in a large bow
Mix granulated sugar and coconut oil in another medium dish with an electric mixer until light and creamy. Each egg should be added and beat on low speed until mixed.
Beat in lemon zest and juice on low speed.Alternate adding dry components to the egg mixture with buttercream and fliur mixture on low speed.
Scrape bowl sides and bottom as needed.Empty the muffin cups half way and pour the remainder of the batter to the cake pan.
Place the cake pan in the oven's centre rack and the cupcakes above it.Bake until a toothpick put into the centre comes out clean, 20 minutes for cupcakes and 30 minutes for cake.
You should wait five minutes for the cupcakes and cake layer to cool in the pan before transferring them to a rack to finish cooling completely before icing them.
Put all the ingredients in a bowl and use an electric mixer to beat them together until the mixture is smooth. Cover the cake, but leave some space for the paws and tail.
Split the cake in half vertically.Frost the top of one half, then put the other half on top of it. Place the layers on their cut end with the square side facing up.
Cut the cupcakes into tail-like shapes, and then use toothpicks to connect one to the middle of the top of the cake for the tail. And two as paws on each end of the cake's bottom.
The paws and tail should be covered with additional icing. Shredded coconut should be used to cover the cake.
In order to construct the bunny's feet, press a piece of strawberry and three blueberries into each individually shaped cupcake paw.Put the cake in the refrigerator for two to three hours before slicing it and serving
