Your favourite cake is made into delectable carrot cake cookies with freshly grated carrots, toasty spices, walnuts, and a vanilla frosting. These are created from scratch without cake mix!
– 3 cups all-purpose flour – 1 tablespoon ground cinnamon – 1 teaspoon baking soda – ½ teaspoon baking powder – ½ teaspoon ground ginger – ½ teaspoon salt – 1 cup (2 sticks) butter (softened to room temperature) – 1 cup granulated sugar – 1/2 cup packed light brown sugar – 2 large egg – 2 teaspoons vanilla extract – 2½ cups grated carrots (about 6 carrots) – 1/2 cup chopped walnuts (optional) – 1/2 cup powdered sugar – 1-2 tablespoons milk
Ingredients
The oven should be preheated to 350 degrees Fahrenheit. Using parchment paper, line two baking sheets (a rimmed cookie sheet measuring 12 inches by 17 inches). Put aside for later.
Add the all-purpose flour, cinnamon, baking soda, baking powder, ginger, and salt to a medium-sized bowl. Use a whisk to mix the ingredients together. Put away.
Wet Ingredients: Beat butter, sugar, and light brown sugar until light and fluffy in a large basin using an electric hand mixer or stand mixer with the paddle attachment. About 1-2 minutes of beating.
After adding each egg, beat on low speed until combined.Beat in vanilla extract until blended. Use a spatula to scrape bowl sides.
When you have finished adding the flour mixture to the bowl containing the wet ingredients, mix it on low speed until it is completely integrated and there are no flour streaks left in the batter.
Mix in the walnuts and carrots that have been shredded. Mix on a moderate speed until everything is incorporated.
Apply the carrot cake cookie dough to the baking sheets that have been prepared, leaving about two inches of space between each scoop. I do this with a cookie scoop that is of a medium size.
Baking time should be between 12 and 15 minutes, or until the edges are golden brown and firm.
After removing the cookies from the oven, allow them to cool for half an hour on the baking sheet they were baked on.
Make the Glaze: Once the cookies are cool, make the simple vanilla glaze. Sugar powder and milk should be mixed together in a small bowl until a glaze forms.
Spread the glaze on the cookies with a fork, a piping bag, or a Ziploc bag that has had the bottom piece cut off.
