Ingredients
- 4 chicken breasts, about 8 oz each, sliced in half lengthwise to make 8
- 3/4 cup seasoned bread crumbs, I used whole wheat, you can also use GF crumbs
- 1/4 cup grated Parmesan cheese
- 2 tbsp butter, melted (or olive oil)
- 3/4 cup reduced fat mozzarella cheese, I used Polly-o
- 1 cup marinara or Filetto di Pomodoro
- cooking spray
Instructions
- Turn the oven on to 450°F. Lightly mist a sizable baking sheet with cooking spray.
- In a bowl, mix together breadcrumbs and parmesan cheese. In another basin, melt the butter. Brush the chicken with a small amount of butter, and then dunk it in the breadcrumb mixture. Transfer to a baking sheet, then repeat with the other chicken.
- After giving it one last little mist of oil, bake for twenty-five minutes.
- Take out of the oven, then cover each chicken piece with 1 tablespoon sauce and 1 1/2 tablespoons of shredded mozzarella cheese.
- Bake for a further five minutes, or until the cheese melts.
