Healthy Chicken Parmesan Easiest Recipe Ever: A somewhat healthier version of the best chicken parmesan dish! Despite being baked rather than fried, the chicken in baked chicken cutlets is incredibly flavorful and juicy.

Ingredients

  • 4 chicken breastsabout 8 oz each, sliced in half lengthwise to make 8
  • 3/4 cup seasoned bread crumbsI used whole wheat, you can also use GF crumbs

  • 1/4 cup grated Parmesan cheese
  • 2 tbsp buttermelted (or olive oil)

 

  • 3/4 cup reduced fat mozzarella cheeseI used Polly-o
  • 1 cup marinara or Filetto di Pomodoro
  • cooking spray

Instructions

 

  • Turn the oven on to 450°F. Lightly mist a sizable baking sheet with cooking spray.

  • In a bowl, mix together breadcrumbs and parmesan cheese. In another basin, melt the butter. Brush the chicken with a small amount of butter, and then dunk it in the breadcrumb mixture. Transfer to a baking sheet, then repeat with the other chicken.

 

  • After giving it one last little mist of oil, bake for twenty-five minutes.

  • Take out of the oven, then cover each chicken piece with 1 tablespoon sauce and 1 1/2 tablespoons of shredded mozzarella cheese.
