Easy No-Bake Granola Bars Recipe – Step by Step Guide
INGREDIENTS

1 ¾ cups old-fashioned oats or quick-cooking oats
- 1 teaspoon ground cinnamon

½ teaspoon fine sea salt (if using regular table salt, scale back a bit)

2 cups mix-ins* (nuts, seeds, chocolate, shredded coconut or dried fruit)

1 cup creamy peanut butter or almond butter

½ cup honey or maple syrup
-
1 teaspoon vanilla extract
INSTRUCTIONS
- Line a 9-inch square baking dish with two strips of crossed parchment paper that are cut to fit against the bottom and up the sides. After the bars are cool, the parchment paper will make it easy to cut them.
- Get a big bowl and add the oats to it. Put in the salt and cinnamon and mix them in. Put away.
- We are now going to quickly blend or process the mix-ins, or you can cut them up by hand.
- Just put in any big nuts, like pecans or almonds, and blend for a short time. Next, add the rest of the ingredients and run the machine for a few more seconds. This will make sure that all of the ingredients are broken up into pieces smaller than your finger nail. Add the mix-ins to the bowl of oats.
- Put the nut butter into a 2-cup liquid measuring cup. Add the vanilla extract and ½ cup of honey on top. Mix everything together well. You can warm the liquid mixture slowly on the stove or in the microwave if you have to, but make sure it’s almost room temperature before you add it to the dry mixture. This is especially important if you’re using chocolate, which will melt.
- Put the wet ingredients into the bowl with the dry ingredients. Put them together with a big spoon and mix them until there are no more dry oats. You will need strong arms to do this, but you can do it! You need to add more oats if the combination was easy to mix. Sprinkle in more oats until you can’t keep them from sticking together.
