I used to go a quarter of a mile to have a plate lunch of Hawaiian macaroni salad and chicken katsu when I was expecting my first child. I would still put my newborn in the stroller and go for walks to satisfy my need even after she was delivered. We moved soon after she was born, and until I went to a street cart in Portland last month, I had almost completely forgotten about this amazing salad.
