White Chocolate Chip Strawberry Cookies 

For Valentine's Day or to celebrate strawberry season, try these simple strawberry cookies made with real strawberries and creamy white chocolate chips! They're delicious and pretty! 

– 8 tablespoon butter  – ½ cup white sugar – ½ cup brown sugar – 2 teaspoon vanilla extract – 1 large egg  – 1 ½ cup all-purpose flour – 1 teaspoon baking soda – ¼ teaspoon salt – ½ cups white chocolate chip – ¼ cup diced strawberries + more for decoration

In a large bowl, mix butter and sugar. Blend until creamy with an electric hand mixer or stand mixer on low. Slowly add egg and vanilla.

In another large bowl, mix dry ingredients. Mix well and add to wet ingredients in batches. Beat gently until combined.

Add strawberries and white chocolate chips. Freeze the sticky batter for 30 minutes or more to form firm balls.

Chill between batches for uniform cookies and less spreading. Heat the oven to 350 F.

Scoop Roll 1 ½ tablespoons of dough into 2-inch balls. Place cookie balls on a parchment-lined baking sheet at least 3 inches apart.

On the lined sheet, bake 12-14 minutes. Top hot cookies with strawberries and chocolate chips.

Soft centres will be in the cookies. They will set well and remain soft and buttery inside after cooling.

After allowing the cookies to cool in the pan for five to ten minutes, move them to a wire rack to finish cooling.
