FOR THE SESAME SEED SHORTBREAD CRUST – 1 cup flour – 2 tablespoons light or dark brown sugar packed – ¼ cup powdered sugar – ¼ teaspoon salt – ¼ cup sesame seeds toasted – ½ cup unsalted butter cut into 1/2 inch pieces, cold – 1 egg yolk – ½- 1 ¼ tablespoons water FOR THE TAHINI CARAMEL – 1 cup sugar – ½ cup plus 1 tablespoon water – 3 ½ tablespoons butter – ¼ plus 1 1/2 tablespoons cup heavy cream – ¾ cup tahini room temperature – ⅛ teaspoon salt FOR THE CHOCOLATE GANACHE – 7 ounces semisweet or bittersweet chocolate chopped – 3 ½ tablespoons heavy cream OPTIONAL TOPPINGS – Flaky sea salt – Toasted sesame seed

SAME SEED SHORTBREAD CRUST Preheat oven to 350 F and grease an 8- or 9-inch square baking dish. Two overlapping parchment paper sheets should cover the bottom, leaving a two-inch overhang on all sides.

In a food processor with a blade, pulse flour, brown sugar, powdered sugar, and salt. Put sesame seeds in and pulse once or twice. Add the butter and pulse until pea-sized (bigger chunks are fine).

Add the egg yolk and pulse until barely combined, then add water. Turn dough into prepared pan and push mixture into pan base with hands. Bake till softly golden brown, 20–23 minutes. Cool the pan on a rack after removing from oven.

TAINI CARAMEL  Water and sugar in a medium saucepan over medium heat. A light-colored sauce pan helps you see when the sugar changes colour.

Let the mixture boil on low over medium heat for 11-13 minutes until it turns rich crimson orange. Remove pan from heat and whisk in butter and cream.

Stir in salt and tahini when butter melts. Cover cooled shortbread with tahini caramel sauce. Spread caramel evenly with an offset spatula if needed. Let cool for an hour before applying the chocolate coating.

CHOCOLATE GANACHE TOPPING  Put chocolate and heavy cream in a microwave-safe bowl. Stir thoroughly between 25-second microwave bursts. Be careful not to burn/overcook the chocolate while you melt it.

Step 7

Spread the melted chocolate on the tahini caramel using an offset spatula. You can add sea salt or roasted sesame seeds. Cover and refrigerate until chocolate sets, 1–2 hours.
