Taco Breakfast Casserole Recipe

The whole family will appreciate this quick, cheesy Taco Breakfast Casserole! The dish is heavenly with hash browns, eggs, cheese, peppers, and ground taco meat! 

– 1 Tbsp avocado oil – 1 yellow onion chopped – 1 lb lean ground beef – 1 green bell pepper chopped – 2 Tbsp chili powder – 3 cloves garlic minced – 1 7-oz can diced green chili – 15 ounces frozen hash browns thawed* – 1 1/2 tsp sea salt to taste – 3 cups grated cheddar cheese** – 12 egg

Pre-heat the oven to 350°F and gently oil a large (13" x 9") casserole dish.

Add the onion to avocado oil in a large skillet over medium heat. Stir constantly until onion is transparent, 4–6 minutes.For browning, break up the ground beef using a spatula.

Drain more fat if desired. Simmer the bell pepper, chilli powder, garlic, sliced green chillis, salt, and black pepper for 3 minutes until fragrant.

Add frozen hash browns, ground beef mixture, sea salt, and half the grated cheese to the casserole dish in an equal layer. Mix everything well.Beat eggs well in a large bowl.

Sprinkle sea salt on meat and potatoes and pour egg mixture evenly.Reuse grated cheese.The casserole should be solid after 45–55 minutes on the centre rack of a preheated oven.

Serve the dish sliced after 15 minutes of cooling.Toppings for breakfast taco casserole include sour cream, avocado slices, guacamole, diced tomatoes, spicy or mild salsa, hot sauce, etc.
