Strawberry Shortcake Cookies

These strawberry shortbread cookies will become your favourite dessert! These soft cookies have a biscuit base, chopped strawberries, and a sweet sugar glaze.  

– 1 ½ cup strawberries  – 1 teaspoon lemon juice – ½ cup sugar + 2 tablespoon – 2 cups flour – 2 teaspoon baking powder – ½ teaspoon salt – 8 tablespoon butter  – ⅔ cup heavy cream – ¼ teaspoon baking soda – 1 teaspoon vanilla

Heat the oven to 375 F. Mix sweet strawberries, lemon juice, and 1 tablespoon sugar in a medium bowl. Set aside.

Mix flour, sugars, baking powder, soda, and salt in a large bowl. Add butter and crumble. Add the sweet cream and knead until combined.

To avoid moisture, add diced strawberries and discard the strawberry juice in the bowl. Set it aside for later use.

You must work quickly with sticky strawberry cookie dough. Refrigerate dough between batches to simplify.

Place 1 ½ tablespoons of dough balls on a parchment-lined baking sheet, 2-3 inches apart. Sprinkle 1 tablespoon sugar on cookies.

Bake the biscuits for 15 minutes until fluffy and cooked. After baking, the top will be slightly moist.

Cool the cookies completely. While cookies cool, mix 1 tablespoon strawberry juice and powdered sugar until smooth.

It may be too runny; add powdered sugar. After the cookies cool, drizzle strawberry glaze and enjoy!
