Small Batch Blondies Recipe

Makes just enough blondies to share with a few of your favourite dessert lovers. These are easy and quick to mix. 

INGREDIENT

– 2/3 cup (80g) all-purpose flour – 1/4 teaspoon baking powder – 1/8 teaspoon salt – 1/3 cup (75g) unsalted butter, melted and cooled slightly – 2/3 cup (133g) firmly packed dark brown sugar – 1 large egg – 1/2 teaspoon vanilla extract – 1/2 to 2/3 cup your favorite add-ins (nuts, chocolate chips, dried fruit, etc.)

Heat the oven to 350°F. Grease parchment paper and line a 9" x 5" loaf pan. To sling the baked blondies, place the lining over the pan's edges.

INSTRUCTIONS

Mix flour, baking powder, and salt. Set aside. Mix cooled butter, brown sugar, egg, and vanilla in a medium bowl. 

Step 2

Gradually mix flour and butter. Mix just until combined or flour streaks remain. Add your desired ingredients. 

Step 3

Evenly distribute batter in pan. Bake 22–25 minutes until edges are browned and a pick inserted into the centre comes out clean.

Step 4

Wire-rack-cool the blondies in the pan. Lift them from the pan onto a wire rack with parchment paper. Cutting into bars.
