A light fruitcake with tasty dried fruits and marzipan and apricot jam on top is called a simonel cake. This is a traditional holiday cake that is often served at Easter in some European countries.

Ready the oven to 350 degrees Fahrenheit.Prepare a bundt cake by lightly greasing it with baking spray or butter, and then set it aside.
Flour, baking soda, baking powder, and salt should be mixed together in a bowl of medium size. In order to mix, stir. Put aside for later.
Mix the butter and sugar in a big bowl until the mixture is smooth and fluffy. Each time you add an egg, whisk it in afterwards. Put in vanilla, lemon zest, orange zest, and lemon juice.
Scrape the sides and bottom of the bowl and beat until everything is fully mixed.Adding the flour mixture in two parts and beating each time until it is fully mixed in.
Add the nuts, raisins, cranberries, and dried fruits and stir to combine.Transfer the batter to the pan that has been prepared.
Bake the cake for forty-five to fifty minutes, or until a toothpick inserted into the middle of the cake retrieves a clean conclusion.
After allowing the cake to cool for thirty minutes in the bottom of the pan, flip it over onto a serving dish and allow it to cool through completely.
Microwave apricot jam for 30 seconds, mix, and microwave again. Evenly cover the cake. Chill the cake for 30 minutes to chill and settle.
Make a disc out of the marzipan and place it on top of the cake. Cut a hole in the centre to make it look like a bundt cake and lightly press the disc onto the cake.
Apricots that have been chopped and dried should be used as a garnish.Take your time and enjoy the meal!
