TAHINI HONEY SWIRL– 1/3 cup tahini– 1/3 cup honeyCOOKIES– 2 sticks (1 cup) salted butter, at room temperature– 1 cup dark brown sugar– 1/4 cup honey– 1/4 cup tahini– 1 egg– 2 teaspoons vanilla extract– 2 1/3 cups all-purpose flour– 1 teaspoon baking soda– 1/2 teaspoon ground cinnamon– 1/2 teaspoon kosher salt– 1 1/2 cups semi-sweet chocolate chunks or chips– Flaky salt

To swirl honey-tahini. In a small bowl, mix 1/3 cup tahini and 1/3 cup honey. Store in the fridge while making cookie dough.

Heat the oven to 350°F. Parchment a baking sheet. Mix butter and brown sugar in a bowl. Mix 1/4 cup honey, 1/4 cup tahini, egg, and vanilla.

Beat in flour, baking soda, cinnamon, and salt until smooth. Add chocolate chips. Dollop 1/2 teaspoon of tahini honey swirl into the dough. Don't overmix the tahini—you want lumps.

Place spherical tablespoon-sized dough balls 3 inches apart on the prepared baking sheet. Bake 7-8 minutes. Flatten the baking sheet by tapping it twice on the counter after removing it from the oven.

Return the cookies to the oven for another 1-2 minutes until the borders are just starting to firm but the centre is still doughy. Season with sea salt.

Leave cookies on baking sheet to cool. While on the baking pan, they will cook slightly.
