Refined Sugar Free Banana Bread 

A light and slightly chewy texture, tonnes of banana flavour, and moist, fluffy, and delicious, this healthier no butter and no refined sugar-free banana bread is delicious. 

– 1 ¾ cup whole wheat flour – ⅓ cup coconut oil – ¼ cup maple syrup  – 2 large egg – 1 cup mashed banana – 1 larger extra banana for decoration – 3 tablespoon Greek yogurt – 3 tablespoon milk – 1 teaspoon baking soda – 1 teaspoon vanilla extract – ½ teaspoon kosher salt – ½ teaspoon ground cinnamon

Adjust the oven temperature to 325 degrees F. Grease or line a 4.5" x 8.5" loaf pan with parchment paper. Put aside.

Beat eggs, mashed bananas, yoghurt, milk, maple syrup, vanilla extract, and coconut oil together in a big mixing bowl until smooth.

All of the ingredients, including cinnamon, baking soda, and salt, should be mixed together in a separate bowl.

With the help of a sifter, gradually incorporate these dry ingredients into the banana mixture in two separate batches.

For added sweetness and flavour, add ½-¾ cup of chocolate chips or ½ cup of dried fruit/nuts. Stir ingredients with a spatula until combined.

Put the batter in the greased loaf pan and bake for 60 minutes. Half a larger banana and place it on the batter. Press it into the batter.

When baked, banana caramelises, adding moisture and sweetness to the bread. Check for doneness with a toothpick at 50 minutes.
