Delicious Potato & spring onion breakfast pancakes onions

This Irish-style breakfast, brunch, or side food is made from "boxty," which are potato cakes.

– 140g floury potatoes (weighed after peeling), cut into large chunk – 50g self-raising flour – ½ tsp bicarbonate of soda – 3 large eggs – 5 tbsp milk – 3 spring onions, finely chopped – 2 tsp sunflower oil, plus extra if needed – knob of butter – 6 rashers streaky bacon (smoked or unsmoked)

Boil potatoes in a big pan of salted water until tender. Drain, return to pan, shake gently for 1 minute to dry, mash, and cool.

Place cooled mash in a bowl with flour and bicarb. Mix 1 egg with milk, season, and pour into bowl. Whisk until smooth.

Mix in spring onions, reserving some for serving. Heat half the oil and butter in a non-stick pan till sizzling, then add half the pancake batter to make 3 pancakes.

Step 3

Flip and cook the opposite side after 1 minute on each side until browned and set. Keep heated in oven while making 3 more pancakes.

Step 4

After wiping the pan, add bacon and cook until almost crisp. Push to one side and crack in the remaining 2 eggs, adding oil if needed.

Fry until done, then serve with the pancakes and bacon, with the rest of the spring onions on top.
