You can make your own pie crust, a tasty cinnamon brown sugar filling, and a simple icing to make this Pop Tart Gingerbread House. It's fun to create this big pop tart, and it's great for the holidays!

Pop Tart Crust – 2½ cups all purpose flour – 1 teaspoon salt – 2 teaspoons granulated sugar – ½ teaspoon cinnamon – 1 cup unsalted butter cold, cubed – 3-4 tablespoons water cold Egg Wash – 1 egg – 2 teaspoons water Cinnamon Brown Sugar Filling – ½ cup light brown sugar – 2 teaspoons cinnamon – 1 tablespoon all purpose flour – ¼ teaspoon salt – ¼ teaspoon vanilla extract Cinnamon Icing – ¾ cup powdered sugar – ½ teaspoon vanilla extract – ½ teaspoon cinnamon – 1 tablespoon whole milk, heavy cream or water Powdered Sugar Icing – ½ cup powdered sugar – 2 tablespoon heavy cream or milk

Pop Tart Dough  Add an ice cube to a small basin of cold water. Set aside. While assembling the dry ingredients, chop butter into cubes and refrigerate or freeze for 15 minutes. Pulse flour, cinnamon, sugar, and salt in a food processor.

Pulse in diced butter until dough resembles wet sand. While pulsing, add ice water a tablespoon at a time until just mixed. Place dough on plastic wrap. Divide dough in half.

Put each part on plastic wrap. Dough balls should be loosely wrapped in plastic and gently pressed into flat oval discs. Store each disc in the fridge for 30 minutes or two days.

While the dough chills, make the cinnamon brown sugar filling and egg wash. Recipes below. Prepare two baking sheets with parchment. I suggest cutting a parchment paper gingerbread house template.

It will help equalise dough sheets. Generously flour your counter. Before making the pop tart, take one disc out of the fridge. Roll the first disc into a floured 9" x 12" rectangle. Trim edges using pizza cutter or knife.

Carefully place dough on baking sheet and refrigerate. Release another identical disc. Use egg wash to edge the first crust by 1 inch. Apply liberal cinnamon brown sugar filling to dough. Leave 1-inch margin.

Cover bottom crust carefully with top. Finger-press the dough edges to seal the top and bottom crusts. Crimp edges with fork. Make fork or toothpick holes in the dough and chill for 30 minutes.

Preheat oven to 375 F. Remove chilled dough and egg wash generously. Rotate pan halfway through baking for 20–23 minutes until golden brown. Cool before icing.

Egg Wash  Mix egg and milk in a small bowl. Filling: Cinnamon Brown Sugar  Mix brown sugar, cinnamon, flour, vanilla, and salt. Spread on pop tart.  Icing Cinnamon  Mix cinnamon, powdered sugar, heavy cream or milk, and vanilla.

Powdered Sugar Icing Mix powdered sugar, heavy cream, milk, and vanilla. Decorating Pop Tarts Spread cinnamon frosting on the gingerbread house with a spoon, offset spatula, or spatula.

Pipe powdered sugar frosting over roof and windows to resemble snow. Put frosting in a sandwich bag and cut the corner or use a piping bag with a small round tip or spoon. If desired, put sprinkles or sanding sugar on wet frosting.
