Pesto Chicken Kabobs are easy to make and only need 5 things. You can cook the kabobs in the oven or on the grill for 30 minutes. They make a tasty and healthy dinner.
Ingredients
Add salt, pepper, and 1 tablespoon of garlic powder to the chicken. Put the chicken and 1½ cups of pesto in a big Ziplock bag (or bowl). Let it sit for at least 30 minutes, or overnight for the best results.
If you're soaking the chicken overnight, make sure to turn the bag every so often so the pesto sauce covers all the chicken evenly.Warm the oven up to 425F.
Add cherry tomatoes and chicken to skewers. Season with salt and pepper to taste. Place on a baking sheet pan that has been oiled with olive oil or lined with parchment paper.
Turn the kabobs once while they're cooking. The chicken should be cooked for about 25 to 30 minutes, or until it turns golden brown and hits 165 degrees F inside.
Once the skewers have been removed from the oven, you can decorate them with fresh parsley and add large pearl buffalo mozzarella to them if you so choose.
The meal should be served with the remaining half cup of pesto sauce drizzled over it before proceeding to serve.Have a good time!
