Ingredients
The culinary lavender should be ground or chopped very coarsely.After combining the flour and salt in a medium-sized mixing basin, set the bowl aside.
Butter, vegetable shortening, and sugar should be mixed together until they are completely incorporated in a stand mixer that is equipped with the paddle attachment.
Mix in the lemon juice, lemon zest, and lavender that has been finely chopped until everything is incorporated.
To ensure that the flour mixture is completely incorporated, add it one cup at a time and mix it on a slow to medium speed.
Place the dough on a greased surface and roll it into a log that is about 3 inches across. Wrap it up in plastic wrap and put it in the fridge for at least an hour, or better yet, overnight.
Put the oven on to a temperature of 350 degrees Fahrenheit.A sheet of parchment paper should be placed on top of two cookie sheets.
Cut the log of dough into 1/4-inch-thick pieces with a sharp knife. Put the cookies on baking sheets that haven't been oiled and bake for 10 to 12 minutes.
Before you ice them, let the cookies cool to room temperature.Sugar and lemon juice should be mixed together in a medium-sized bowl.
Use a spoon to stir the mixture until it is smooth, shiny, and free of lumps. One teaspoon at a time, add more lemon juice if the mix is too thick.
After the cookies have cooled, drizzle the icing over them. Before serving, allow the frosted cookies to sit for fifteen to twenty minutes so that the icing can settle.Deliver!
