It's easy to make these soft Key Lime Cookies, which taste great. They taste very limey because they have both lime peel and juice in them. Simple items are all you need to make a batch that doesn't need to be chilled.

Key Lime Cookie – ¾ cup unsalted butter – ¾ cup granulated sugar – ½ cup light brown sugar – 1 large egg room temperature – 2 tablespoons key lime zest – 2 tablespoons key lime juice – ½ cup sour cream – 2½ cups all purpose flour – 1 teaspoon baking soda – ½ teaspoon salt Key Lime Glaze – 1⅓ cups powdered sugar – 2½ tablespoons key lime juice – 1 tablespoon key lime zest

Key Lime Cookies  Whisk all-purpose flour, baking soda, and salt in a medium bowl. Set aside. Rub the zest into the sugars in a large basin with your fingertips.

The butter and sugars should be mixed with an electric mixer for 2 minutes until light and frothy. Beat in egg and lime juice.

While mixing on low speed, alternate adding dry ingredients and sour cream. Beat simply to blend.

Step 3

Scoop heaping tablespoons of dough. Roll dough into heaping tablespoon-sized balls and lay 2 inches apart on a parchment-lined baking sheet.

Step 4

Bake 8-10 minutes at 350°F until sides are brown. After 10 minutes on the baking sheet, move to a rack to finish cooling.

Key lime glaze  Mix powdered sugar, lime zest, and juice with a little whisk or spoon in a medium bowl. Apply glaze to cooled cookies. Dunk the cookie tops in the glaze too.
