INGREDIENT
– 2 cups rolled oats– 2 ripe bananas 1 cup mashed– 2 large egg– 3 Tbsp avocado oil– 3 Tbsp pure maple syrup– 1 tsp pure vanilla extract– 1 tsp apple cider vinegar– 2 tsp baking powder– 1/4 tsp baking soda– 1/2 tsp sea salt– 1 1/2 tsp ground cinnamon optional– 1 cup fresh blueberrie
Preheat the oven to 350°F and line a muffin tin with 6-9 muffin papers, depending on your muffin size. I bake 6 large muffins).

INSTRUCTIONS
Blend rolled oats in a high-speed blender for 30 seconds to make flour. Blend all muffin ingredients except the blueberries in a blender or food processor until combined.
Step 2
Pour the muffin batter into the pan, filling each hole ⅔ full. Put your desired number of blueberries in each muffin batter.
Step 3
You can stir all the blueberries into the batter before pouring it into the muffin holes, but I prefer hand-mixing them for a more even distribution. I put them in the batter and on the muffins.
Step 4
The muffins should be golden brown and clean after 20–30 minutes on the centre rack of the preheated oven. Cool the muffins before peeling.
