Easy Chicken Paprikash

Chicken breast-based Easy Chicken Paprikash is healthier. Tender chicken breasts in a rich sweet paprika sauce with bell peppers over noodles. Quick and easy weeknight dinner.  

– 1 tablespoon olive oil – 1 pound chicken breast – 1 onion  – 3 cloves garlic  – 1 bell pepper – 2 tablespoons sweet paprika – salt and pepper  – ¼ teaspoon red pepper chili flake – ½ cup chicken broth – 15 ounce diced tomatoes  – 2 tablespoon all-purpose flour – ¼ cup sour cream – fresh parsley

Heat the olive oil in a medium-sized pot or Dutch oven over medium-high heat.

When the chicken is no longer pink inside, add the onion and chicken pieces to the pot and cook for 5 to 7 minutes.

Add the garlic and peppers and stir. Stir gently after adding the paprika, salt, pepper, and red chilli flakes.

Add the diced tomatoes and chicken broth. Heat until boiling. Refill the pot with this mixture and stir.

Using a ladle of the pot's broth, whisk the flour and sour cream in a small bowl.

Reduce the heat to medium-low and simmer, stirring occasionally, for approximately 20 minutes.

The flour will cause the sauce to thicken. Serve with noodles, rice, or potatoes and garnish with parsley.
