To make this easy Easter cake, you start with a boxed cake mix that is changed in some ways. Then, you turn it into a bundt cake with springtime colors!
– 1 box (15.25 oz) white OR vanilla cake mix (not with 'extra pudding in the mix') – 1 box (3.4 oz) cheesecake OR vanilla instant pudding mix – 4 large egg – 1 cup full-fat sour cream – 1/2 cup whole milk – 1/2 cup vegetable oil – 1 teaspoon vanilla extract – neon gel food color – 2 cups powdered sugar – 2 tablespoons butter melted – 2-4 tablespoons milk (see notes) – 1 teaspoon vanilla extract – pastel Easter themed sprinkle
Ingredients
Warm the oven up to 350℉. Grease and flour a 10-cup bundt pan well. You can use Baker's Joy spray and flour, nonstick cooking spray and flour, or butter and flour. Put away.
Put the dry cake mix, instant pudding mix, eggs, sour cream, milk, oil, and vanilla extract in a big bowl. You can use an electric hand mixer or a stand mixer with the paddle attachment.
For about 30 seconds, beat on low speed. Then, scrape the sides of the bowl clean. Beat on medium speed for one to two minutes, or until everything is well mixed.
Divide 1/2 cup cake batter among 3 bowls. Add a few drops of food coloring (1 color per bowl) to the mixture and whisk well until incorporated and desired color.
Spread non-colored white cake batter evenly in the bundt pan. Place spoonfuls of each colored cake batter randomly in the bundt pan over the white cake batter. Swish the colors with a table knife a few times.
If you stick a toothpick into the middle and it comes out with only crumbs on it, the cake is done after 30 to 35 minutes.
Take the cake out of the oven and set it on a wire rack to cool. Allow the cake to cool in the bundt pan for one hour at room temperature.
To make the glaze, put the melted butter and powdered sugar in a small bowl. Mix all that together. After adding the milk and vanilla, mix it all together until it's smooth.
Invert the cooled bundt cake onto a dish. Drizzle glaze over the bundt cake and down the sides. Sprinkle Easter pastels over glaze immediately. Slice and serve!
