Chocolate Chip Ganache Blondies dress up simple blondies with rich ganache!
INGREDIENT
FOR THE BLONDIES:
– 2 cups (240g) all-purpose flour
– 3/4 teaspoon baking powder
– 1/2 teaspoon salt
– 1 cup (226g) unsalted butter, melted and slightly cooled
– 2 cups (400g) firmly packed light brown sugar
– 2 large egg
– 1 & 1/2 teaspoons vanilla extract
– 1 cup (170g) semisweet chocolate chip
– 1 cup (120g) chopped pecan
FOR THE GANACHE:
– 8 ounces (226g) semisweet or bittersweet chocolate, roughly chopped
– 1 tablespoon light corn syrup*
– 1/2 cup heavy cream
– more chopped pecans, for garnish
Make the blondies:
Preheat oven to 350°F. Prepare a 9"x 13"x 2" baking pan. Mix flour, baking powder, and salt. Set aside.
Step 1
INSTRUCTIONS
Mix butter, brown sugar, eggs, and vanilla in a separate bowl. Add flour mixture and mix until combined. Mix in chocolate chips and pecans.
Step 2
Place batter in pan and spread evenly. Bake 30–35 minutes until a pick inserted into the centre comes out clean. Let the pan cool on a wire rack.
Step 3
MAKE GANACHE:
Put chocolate and corn syrup in a heatproof bowl. Set aside.
Step 4
Put cream in a heavy saucepan. Boil on medium-high. Remove cream from heat and pour over chocolate. Wait 5 minutes. Keep stirring until smooth.
Step 5
Pour ganache on blondies. Chop pecans for garnish. Allow ganache to set (10-15 minutes) before cutting into bars.
