– 2 tablespoon olive oil– 1 small onion – 2 cups quinoa – 1 chicken breast– 8 ounce black beans – 4 ounce green chile– 1½ cups enchilada sauce– ½ cup cheddar cheese – 1 cup Mozzarella cheese – sour cream– cilantro – lime wedge

Preheat oven to 350°F. Cooking spray an 8-inch square ceramic or broiler-proof baking dish.

Heat a medium skillet on medium-high. Add oil and onion; sauté 5 minutes until tender.

Lower heat. Stir in quinoa, chicken, black beans, green chiles, and enchilada sauce. Stop cooking.

Add cheddar cheese and stir. Place quinoa mixture in baking dish that has been prepped.

Evenly sprinkle mozzarella cheese on top. Bake for ten to fifteen minutes.

Preheat the oven to broil. Broil the cheese for one to two minutes, or until it is bubbling and golden.

Once the quinoa mixture has been transferred to a baking dish, allow it to come completely to room temperature.

Take out of the grill. Add cilantro and sour cream on top. Serve right away.
