INGREDIENT
Carrot Slaw:– 1 pound carrots grated– 2 cups red cabbage thinly sliced– 2 cups green cabbage thinly sliced– 1 gala apple julienned– 1 bunch green onion chopped– 1 cup sliced almond– ½ cup dried cranberriesFor the Dressing– ⅓ cup mayonnaise– 4 Tbsp lemon juice or apple cider vinegar– 2 tsp honey– 1 tsp dijon mustard– 1 tsp dried parsley– 1/2 tsp sea salt
Mix coleslaw dressing ingredients in a small bowl or measuring cup until creamy. Store for up to 4 days or while making the rest of the recipe.

Note: double the dressing for a dressing-heavy coleslaw. Box-grate carrots and knife-thinly slice cabbage. Slice green onions (discard white).
Step 2
Make thin apple matchsticks. Let carrots, cabbage, green onions, apple, sliced almonds, and dried cranberries mix in a large bowl.
Step 3
Mix all the creamy coleslaw dressing in the bowl until lightly coated. Taste the carrot apple slaw and add sea salt, dried cranberries, or lemon juice.
Step 4
Serve with mains and sides. Serve this delicious coleslaw as a side or condiment. Tastes great on fish tacos, burgers, hot dogs, sandwiches, and salads
