Carrot Cake Poke Cake is a very simple and tasty cake that is made with a cake mix and a thick layer of mascarpone cream cheese frosting on top.

Warm the oven up to 350°F. In the middle of the oven, put the rack.Spray nonstick baking spray on a 9x13-inch cake pan and set it away.

Make the carrot cake as directed on the package. Duncan Hines Carrot Cake mixes require soaking the carrots and raisins in boiling water and whisking all the ingredients.

Bake batter in prepared pan for 30-32 minutes or until a toothpick comes out with a few wet crumbs. My baking time was 30 minutes.

Remove cake from oven. Poke holes in the cake using a spatula, large straw, or pen if you don't have any.

Mix white chocolate chips and sweetened condensed milk in a medium microwave-safe bowl. Microwave for 1 minute until heated. Continue stirring and heating for 30 seconds or more. Mix until smooth and glossy.

Spread the chocolate mixture evenly into the holes in the cake with a spatula.Sprinkle some ground walnuts on the cake to fill the holes.

Cream cream cheese, mascarpone, and butter on medium speed for 1 minute in an electric mixer or stand mixer with the whisk attachment.

Take a break to use a spatula to clean the bowl's sides and bottom.Mix in the salt and vanilla extract, and keep mixing until everything is well mixed.

With the mixer on medium-low, slowly add powdered sugar. Mix on medium-high until mixed. Stop and spatula-scrape the basin sides and bottom.

If frosting is too thick, add 1–2 tablespoons milk. If frosting is too thin, add 1/3 cup powdered sugar at a time, tasting it carefully to avoid oversweetening. The frosting may look thin, but it will harden/set when cold.

Put walnuts that have been ground on top of the cake.Before serving, put the cake in the fridge for at least 6 to 8 hours.Have fun!
