– Carrot Loaf Cake – 1⅔ cups all-purpose flour – 1 teaspoon baking powder – ½ teaspoon baking soda – ½ teaspoon salt – 1½ teaspoon cinnamon – ½ teaspoon nutmeg – ¼ teaspoon ginger – ½ cup oil extra virgin olive oil, canola or vegetable – 2 large eggs room temperature – 1½ teaspoons vanilla extract – ⅓ cup unsweetened applesauce – ¾ cup brown sugar light or dark, packed – ¼ cup granulated sugar – 1½ cups shredded carrots 2-3 carrots, peeled and shredded – Cinnamon Cream Cheese Frosting – 2 tablespoons unsalted butter room temperature – 2 ounces cream cheese room temperature – 1 cup powdered sugar sifted – ½ teaspoon cinnamon – ¼ teaspoon vanilla extract – ⅛ teaspoon salt
Add powdered sugar after turning off mixer. Beat on low until powdered sugar disappears. Mix on medium high for one minute. Cover with plastic wrap or store in an airtight container. Keep chilled for 4 days.
