Carrot Loaf Cake – 1⅔ cups all-purpose flour – 1 teaspoon baking powder – ½ teaspoon baking soda – ½ teaspoon salt – 1½ teaspoon cinnamon – ½ teaspoon nutmeg – ¼ teaspoon ginger – ½ cup oil extra virgin olive oil, canola or vegetable – 2 large eggs room temperature – 1½ teaspoons vanilla extract – ⅓ cup unsweetened applesauce – ¾ cup brown sugar light or dark, packed – ¼ cup granulated sugar – 1½ cups shredded carrots 2-3 carrots, peeled and shredded Cinnamon Cream Cheese Frosting – 2 tablespoons unsalted butter room temperature – 2 ounces cream cheese room temperature – 1 cup powdered sugar sifted – ½ teaspoon cinnamon – ¼ teaspoon vanilla extract – ⅛ teaspoon salt

Carrot Cake  Spray a 9x5 loaf pan with baking spray on all sides and bottom. Prepare pans with parchment. Spray baking spray on parchment. Heat oven to 350 F.

Whisk together all-purpose flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg in a large bowl. Set aside.

Mix the oil, eggs, sugars, applesauce or sour cream, and vanilla in a large basin until no brown sugar lumps remain.

Combine wet and dry components. Use a spatula to mix the wet ingredients. Stir carrots just until blended. Fill pan with batter evenly.

Step 4

Bake the cake for 40–50 minutes until a toothpick inserted in the centre comes out clean. Put pan on wire rack.

Remove cake from pan after 20 minutes of cooling. Cool thoroughly on the rack. Frost a totally cooled cake.

Frosting: cinnamon cream cheese  Sift powdered sugar, cinnamon, and salt. Set aside.

Beat butter and cream cheese until blended, creamy, and fluffy with an electric mixer with a paddle attachment or in a large basin with a hand mixer. Stir in vanilla and salt.

Step 8

Add powdered sugar after turning off mixer. Beat on low until powdered sugar disappears. Mix on medium high for one minute. Cover with plastic wrap or store in an airtight container. Keep chilled for 4 days.
