Cadbury little Eggs Cookies are chocolate cookies with chocolate chips and colourful little eggs! Candy-coated tiny eggs give these chewy cookies a delightful crunch. They make the perfect Easter and spring treat!

– 1 ½ cups all purpose flour – 1 cup Dutch process cocoa or natural unsweetened cocoa powder – 1 teaspoon baking soda – 1 teaspoon salt – ½ teaspoon cinnamon – 1 cup packed brown sugar light or dark – 1 cup granulated sugar – 1 cup unsalted butter room temperature – 2 large eggs room temperature – 2 teaspoons vanilla extract – ¾ cup semi sweet chocolate chip – ¾ cup Cadbury mini eggs crushed or halved FOR DECORATING – ¼ cup Cadbury Mini Egg – Flaky sea salt for sprinkling, optional

Add the cinnamon, baking soda, salt, and flour and mix them together. Put away.

On medium speed, cream the butter and sugars in a large bowl or the bowl of an electric mixer for three to four minutes, until the mixture is light and fluffy.

After the eggs, add the vanilla. Slow down and add the dry ingredients one at a time.

Add the chocolate chips and Mini Eggs that have been chopped up or broken. Keep the dough in the fridge for at least two hours and up to twenty-four hours.

Let the dough sit at room temperature for about 15 to 30 minutes before you start making cookies. Now you can scoop the dough. Make 1.5-teaspoon balls out of the dough using a cookie scoop.

Make the balls and place them about 3 inches apart on a baking sheet lined with parchment paper. Bake at 350°F for 10 to 12 minutes, or until the tops are just set.

Take them out of the oven and let them cool for five minutes on the baking sheet. Place two or three tiny eggs on top of the warm cookies.

You can also add sea salt if you like. Place cookies on wire racks to cool all the way through.
