Brownie-stuffed Banana Cupcakes With Toasted Marshmallow Frosting Recipe

Wanting banana cupcakes and brownies, I kept adding ingredients. A photo of Mississippi mud brownies caught my eye. The ones with marshmallows and chocolate sauce. I HAD to add marshmallow frosting. I had to. 

Ingredient

– Cupcakes: – 1 1/3 cups all-purpose flour – 1 1/4 teaspoon baking soda – 1/4 teaspoon salt – 1 large egg – 3/4 cup loosely packed brown sugar – 1 teaspoon vanilla extract – 3 cups large or 4 small ripe bananas mashed (about 1 1/4 ) – 1/4 cup greek yogurt – 1/2 cup butter melted – 1/3 cup milk – 1 cup chocolate chips – Brownie – 1/2 butter melted, 1 stick – 4 tablespoons cocoa powder – 2 eggs – 1/2 cup sugar – 3/4 Flour – 1/2 teaspoons vanilla extract – 1/4 teaspoon salt – 1/2 cup chocolate chips – For the Meringue: – 4 large egg white – 1 1/2 cups granulated sugar – 1/2 cup light corn syrup – large pinch of salt – 2 teaspoons pure vanilla extract – Homemade Hot Fudge

Cupcakes: Preheat oven to 350°F. Line two muffin tins. Mix flour, salt, and baking soda in a medium bowl. Mix egg and brown sugar in a large bowl until smooth.

Mix in vanilla. Mix greek yoghurt with melted butter. Add dry ingredients, mashed bananas, and milk and stir until batter forms. Mix in chocolate chips. Set aside.

Brownies: Mix butter and cocoa in a large basin. Mix eggs. Beat in sugar and vanilla. Add butter mixture. Add salt and flour. Just blend. Mix in chocolate chips.

Put 1/8 cup of banana batter in each cupcake liner. The cupcake liners should be 1/4 full. Put a tablespoon of brownie batter in the centre of each cupcake (try to stay there).

Then fill your cupcake liner 3/4 full with banana batter to cover the brownie batter. Bake 15-18 minutes. Let cool fully. For the Meringue: Simmer 2 inches of water in a big pot.

Mix egg whites, sugar, corn syrup and salt in a large heat-proof basin. Sugar makes the mixture gritty. Place bowl over simmering water and stir. After 5 minutes, sugar dissolves. The mixture shouldn't get hot enough to cook the eggs.

Put the egg white and sugar mixture in a stand mixer. Beat egg whites on high for 5 minutes until stiff peaks form with a whisk attachment. The frothy, glossy mixture will resemble melted marshmallows. It'll stick too. Finish with vanilla extract.

Cover and wait to frost cupcakes. Spread a generous dollop of frosting on each cupcake (or pipe it on) and smooth it with a knife. Start oven grill.

Fill a baking sheet with 12 cupcakes. Let cupcakes broil for 1 minute. Keep the grill door open. Watch them toast. For even cooking, remove the cupcakes and flip the pan. Remove toasted cupcakes and toast 12. Optional chocolate sauce. Serve cupcakes!
