7 Up Pound Cake Recipe For Easter day 2024

This retro 7 Up Pound Cake is a classic for its light lemon lime flavour and 7 Up batter! Delicious flavour, delicate texture, and fine crumb.

Ingredients

– 3 sticks (339g) unsalted butter, softened – ▢3 cups (600g) sugar – ▢5 large eggs, room temperature (If in a hurry, place the eggs in a bowl of warm water.) – ▢3 cups (374g) all purpose flour (not self-rising) – ▢zest of 1 lemon and 1 lime – ▢½ teaspoon (2g) baking powder – ▢1 cup (242g) 7 Up – ▢1 teaspoon (4g) vanilla – ▢2 teaspoons (8g) lemon extract FOR THE GLAZE – ▢2 Cups Powdered Sugar sifted – ▢2 Tablespoons Lemon Juice – ▢1 Tablespoon Lime Juice DECORATION – ▢We added a few lemon and lime slices to the top of the cake

Warm the oven up to 325 degrees and grease and flour a tube pan. Then, Put the flour, baking powder, and zest from one lemon and one lime in a different bowl.

Directions

Whisk and set aside.Beat butter in mixer bowl until creamy. Add the sugar slowly and mix for 3–5 minutes until the mixture is lighter and fluffy.

Add the eggs one at a time and mix in between each one until the yellow yolk is fully mixed in. Put the lemon and vanilla extracts in there.

Add the dry ingredients and 7-UP to the butter, sugar, and egg mixture in turns.  Start and end with the dry ingredients (3 cups of dry ingredients and 2 cups of 7-up).

Preheat the oven to 325 degrees. Bake for 1 hour and 10 minutes, or until a toothpick or wooden stick comes out clean or with only a few crumbs on it.

For about 10 minutes, let it cool in the pan before taking it out. Sift together 2 cups of powdered sugar and put it in a mixing bowl.

Put in one tablespoon of lime juice and two tablespoons of lemon juice.  Blend and smooth it out with a spoon.

You can thin out the glaze by adding more lemon juice or thicken it up by adding more powdered sugar.  There will be about 1 cup of glaze left over.
