Chicken Gnocchi Soup

Spread the love

Chicken Gnocchi Soup :-Olive Garden is popular for a reason. The food there is good! And fun to use! You can find hundreds of Olive Garden-style recipes on Pinterest, for everything from their Italian salad sauce to their toasted ravioli.

There are a few reasons why it seems like everyone wants to make these meals at home. To begin, eating at home saves money. You can also make as much as you want (leaves!). If you want to eat out, you don’t have to put on pants that don’t have an elastic belt and drive there. Fourth, you don’t have to eat with your kids.

Actually, I think that should have been my first reason. It’s no secret that taking your kids to a restaurant is a big risk. And there are times when you just don’t want to try your luck.

Chicken Gnocchi Soup

  • 3-4 boneless skinless chicken breasts – cooked and diced
  • 1 stalk of celery – chopped
  • ½ white onion – diced
  • 2 teaspoons minced garlic
  • ½ cup shredded carrots
  • 1 tablespoon olive oil
  • 4 cups low sodium chicken broth
  • salt and pepper – to taste
  • 1 teaspoon thyme
  • 16 ounces potato gnocchi
  • 2 cups half and half – see note
  • 1 cup fresh spinach – roughly chopped

Instructions :

  • In a large saucepan, bring the olive oil to a temperature of medium. After adding the carrots, celery, onions, and garlic, sauté the mixture for two to three minutes, or until the onions become translucent.
  • Gnocchi should be added after the chicken, chicken stock, salt, pepper, and thyme have been brought to a boil and then gently stirred in. Bring to a boil for a further three to four minutes, then reduce the heat to a simmer and continue cooking for ten minutes.
  • Cook for a further one to two minutes after stirring in the half & half and spinach until the spinach is soft. Taste, and if necessary, season with salt and pepper before serving.

  • In order to make gnocchi, potatoes, flour, and eggs are required. I have no idea who was the genius that came up with this combo, but I will be grateful for the rest of my life. Creating gnocchi is a joyful and gratifying activity, provided that you have the time and the will to do it.
  • I have prepared it in the past, but it has been quite some time, and these days I just use the variations that I buy from the supermarket because I feel that they are suitable for the majority of dishes.

  • Yes, you can use a slow cooker to prepare this soup. Let me repeat that. Nevertheless, the following is what I would alter about this recipe. Despite this, I would still use chicken that has been cooked and diced.
  • So make sure you have that prepared. Additionally, prepare the vegetables and garlic by sautéing them. Next, place the chicken and vegetables in a single layer at the bottom of your slow cooker before proceeding.
  • The liquids and all of the other ingredients, with the exception of the gnocchi, half & half, and spinach, should be added. Turn the heat down to low and cook for three to four hours, adding the gnocchi for the final hour it takes to cook.
  • Immediately prior to serving, incorporate the half-and-half and spinach by stirring them together. Ideally, the spinach will wilt quite quickly. Deliver. Have fun. Additionally, make an effort to avoid eating the entire thing in a single sitting.
