Instructions :

  • In a large saucepan, bring the olive oil to a temperature of medium. After adding the carrots, celery, onions, and garlic, sauté the mixture for two to three minutes, or until the onions become translucent.
  • Gnocchi should be added after the chicken, chicken stock, salt, pepper, and thyme have been brought to a boil and then gently stirred in. Bring to a boil for a further three to four minutes, then reduce the heat to a simmer and continue cooking for ten minutes.
  • Cook for a further one to two minutes after stirring in the half & half and spinach until the spinach is soft. Taste, and if necessary, season with salt and pepper before serving.
