Wrap crisp filo dough over fresh spring greens, creamy ricotta, and herbs. Eating greens has never been so fun.

– 500g spring greens, finely shredded, stalks and all – 150g butter – 2 tbsp olive oil – 2 large leeks, halved, cleaned and finely sliced – 4 garlic cloves, crushed – small pack parsley, chopped – small pack mint, chopped – ½small pack dill, chopped – ¼ nutmeg, finely grated – 250g ricotta – 100g pecorino, parmesan or vegetarian alternative, finely grated – 2 eggs, beaten – 1 lemon, zested – 270g pack filo pastry – 3 tbsp sesame seeds (we used a mixture of black and white)

After boiling a big pan of water, add the greens and simmer for 1 minute. Drain and cool in the colander.

Melt 1 tablespoon butter and oil in a big pan. Stir in the leeks and a pinch of salt over medium heat for 8 minutes to soften.

Put the garlic in and cook for another minute, then remove from the heat and chill in a big bowl.

To squeeze as much water out of the greens as possible, pile them on a clean tea towel, collect the corners, and squeeze.

Step 4

Stir in the herbs, nutmeg, cheeses, eggs, zest, and seasoning after adding the greens to the leeks. Preheat oven to 200C/180C fan/gas 6.

A 23cm springform cake tin is needed to make the dessert. Grease the tin with part of the leftover butter melted in the pan or microwave.

Layer filo sheets in the tin, coating each one with butter and leaving plenty of pastry over the edge to seal the top once filled.

Sprinkle sesame seeds between pastry layers. Keep some sheets for the top. Fill the tin with greens after lining.

Step 8

Top the tart with more buttery pastry sheets and fold in the overhanging sheets to seal. Sprinkle remaining sesame seeds and sprinkle remaining butter.

Step 9

Bake until deep golden brown, covering with foil if necessary. Quickly remove from the tin to keep the pastry crisp. Serve hot or cold.
